Gluten-Digesting Enzymes (DPP-IV)
Enzymes sold to break down gluten after accidental exposure. Some of them do degrade gluten in the stomach, but no trial has shown they protect people with celiac disease, and they are not a licence to eat gluten.

What the science says
- Gluten degradation in the stomach Moderate evidence
A randomized study in healthy volunteers showed that an Aspergillus niger-derived prolyl endoprotease (AN-PEP) degraded most of the gluten in a liquid meal before it reached the small intestine. A second randomized trial confirmed the same effect in a complex, solid meal.
- Protection for celiac patients Limited evidence
The best-designed trial of a therapeutic glutenase (latiglutenase, far stronger than supermarket enzyme blends) found no difference from placebo in villous atrophy or symptoms in symptomatic celiac patients. There is no evidence that over-the-counter DPP-IV blends prevent damage from gluten.
- Non-celiac gluten sensitivity Limited evidence
Evidence here is limited to small crossover studies with inconsistent symptom outcomes, and no adequately powered trial of a commercial DPP-IV product exists.
